Biz burada bazen 40-45 derece s\u0131cak alt\u0131nda \u00e7al\u0131\u015fabiliyoruz. Bundan dolay\u0131 \u00e7al\u0131\u015fma \u015fartlar\u0131 zor oluyor. Tamamen do\u011fal buharla\u015ft\u0131rma y\u00f6ntemi ile i\u00e7erisine herhangi bir kimyasal katk\u0131 maddesi katmadan g\u00fcne\u015fin alt\u0131nda kristalle\u015ferek olu\u015fan tuz sa\u011fl\u0131kl\u0131d\u0131r. Bu tuz g\u0131dalar\u0131 uzun s\u00fcre muhafaza ederek raf \u00f6m\u00fcrlerini uzatmaktad\u0131r. Erzincan Tulum Peyniri, tur\u015fu, salamura yaprak gibi bir\u00e7ok \u00fcr\u00fcn\u00fc uzun s\u00fcre muhafaza eder.
