Daha sonra pi\u015firme kazanlar\u0131nda 55 ila 65 derece s\u0131cakl\u0131kta kaynayan s\u00fctler, uygun \u0131s\u0131 ko\u015fullar\u0131nda \u015firden mayas\u0131yla etkile\u015fime giriyor. 90 derecede ha\u015flanan s\u00fct, telemeye (tuzsuz ve yumu\u015fak peynir t\u00fcr\u00fc) d\u00f6n\u00fc\u015f\u00fcyor. Tuzlu olan\u0131 genellikle kahvalt\u0131larda tercih edilen kelle peynirinin tuzsuzu ise yine Bal\u0131kesir&#8217;in co\u011frafi i\u015faretli me\u015fhur damak tad\u0131 Susurluk tostuna lezzet veriyor.<\/p>\n<p>Bal\u0131kesir B\u00fcy\u00fck\u015fehir Belediye Ba\u015fkan\u0131 Y\u00fccel Y\u0131lmaz, AA muhabirine, \u00f6zellikle 1870&#8217;li y\u0131llardan itibaren Bal\u0131kesir&#8217;e Osmanl\u0131&#8217;n\u0131n ba\u015fka co\u011frafyalar\u0131ndan g\u00f6\u00e7 eden halk\u0131n, beraberinde mutfak k\u00fclt\u00fcr\u00fcn\u00fc getirdi\u011fini s\u00f6yledi.<\/p>\n<p><img decoding=\"async\" alt=\"\" src=\"https:\/\/www.aa.com.tr\/uploads\/userFiles\/7e80dc7f-a011-4033-a881-3a6b5b580d82\/20230924_2_60400806_93045006.jpg\"\/><\/p>\n<p>Y\u0131lmaz, Bal\u0131kesir&#8217;in 50 \u00e7e\u015fit peynirinin bulundu\u011funu, bunlar\u0131n co\u011frafi i\u015faretleriyle ilgili ba\u015fvurular\u0131 yapt\u0131klar\u0131n\u0131 aktard\u0131.<\/p>\n<p>Sava\u015ftepe Mihali\u00e7 kelle peyniriyle Bal\u0131kesir&#8217;in co\u011frafi i\u015faretli \u00fcr\u00fcn say\u0131s\u0131n\u0131n 28&#8217;e y\u00fckseldi\u011fini belirten Y\u0131lmaz, &#8220;Bal\u0131kesir \u00e7ok zengin bir il, biz B\u00fcy\u00fck\u015fehir Belediyesi olarak her \u00fcr\u00fcn\u00fcm\u00fcz i\u00e7in co\u011frafi i\u015faret ba\u015fvurusu yap\u0131yoruz. \u015eehrimizin tan\u0131t\u0131m\u0131na katk\u0131da bulunmaya, \u00fcreticilerin bu konuda faydalanmas\u0131n\u0131 sa\u011flamaya \u00e7al\u0131\u015f\u0131yoruz.&#8221; dedi.<\/p>\n<p>Bal\u0131kesir&#8217;i herkesin ke\u015ffedece\u011fini vurgulayan Y\u0131lmaz, 750 binin \u00fczerinde b\u00fcy\u00fckba\u015f, 1,5 milyonu a\u015fk\u0131n k\u00fc\u00e7\u00fckba\u015f, 33 milyon civar\u0131nda da kanatl\u0131 hayvan varl\u0131\u011f\u0131na sahip olduklar\u0131n\u0131 dile getirdi.<\/p>\n<p>Eti, s\u00fct\u00fc ve yumurtas\u0131yla \u00e7ok g\u00fc\u00e7l\u00fc bir il olduklar\u0131na dikkati \u00e7eken Y\u0131lmaz, &#8220;Baz\u0131 \u015fehirler sadece bir \u015fey \u00fcretir ve onda me\u015fhurdur ama biz her \u015feyi yeterinden fazla \u00fcreterek T\u00fcrkiye&#8217;de ilk 4&#8217;teyiz. Yani sadece hayvansal \u00fcr\u00fcnlerde de\u011fil tar\u0131msal \u00fcr\u00fcnlerde de \u00f6n s\u0131ralarday\u0131z, T\u00fcrkiye&#8217;yi doyuran bir iliz. Bu tecr\u00fcbeler de zamanla birikince &#8217;50 peynirli \u015fehir Bal\u0131kesir&#8217; oluyor.&#8221; de\u011ferlendirmesinde bulundu.<\/p>\n<p><img decoding=\"async\" alt=\"\" src=\"https:\/\/www.aa.com.tr\/uploads\/userFiles\/7e80dc7f-a011-4033-a881-3a6b5b580d82\/20230924_2_60400806_93045008.jpg\"\/><\/p>\n<h3>&#8220;G\u00f6zenekler ne kadar \u00e7ok ve d\u00fczg\u00fcnse o peynir o kadar kalitelidir&#8221;<\/h3>\n<p>Peynir \u00fcreticisi Onur Alt\u0131n\u00f6z de Sava\u015ftepe&#8217;de yeti\u015ftirilen hayvanlardan elde edilen s\u00fct\u00fcn kaliteli oldu\u011funu, bunun peynirin lezzetine yans\u0131d\u0131\u011f\u0131n\u0131 anlatt\u0131.<\/p>\n<p>Mihali\u00e7 kelle peynirinin, rengi a\u00e7\u0131ktan sar\u0131ya do\u011fru giden sert peynir grubuna girdi\u011fi bilgisini veren Alt\u0131n\u00f6z, \u015funlar\u0131 kaydetti:<\/p>\n<p>&#8220;Fabrikam\u0131zda g\u00fcnl\u00fck 30 ton s\u00fct i\u015fliyoruz. 11 kilo s\u00fctten 1 kilo peynir elde ediyoruz. G\u00fcnde 2 ton civar\u0131nda kelle peyniri \u00fcretiyoruz. Bunun bir k\u0131sm\u0131n\u0131 Susurluk tostu i\u00e7in \u00fcretiyoruz, bir k\u0131sm\u0131n\u0131 da normal kelle peyniri olarak \u00fcretiyoruz. Ayl\u0131k 60 ton civar\u0131nda Sava\u015ftepe Mihali\u00e7 kelle peyniri \u00fcretimi yapmaktay\u0131z. Peynirlerimizi Susurluk, Bursa, Karacabey, Manyas, \u0130stanbul, \u0130zmir ve \u00e7evresine g\u00f6nderiyoruz.&#8221;<\/p>\n<p>Alt\u0131n\u00f6z, co\u011frafi i\u015faretin sadece kendileri i\u00e7in de\u011fil il\u00e7e i\u00e7in de olumlu bir ad\u0131m oldu\u011funu vurgulayarak \u015f\u00f6yle konu\u015ftu:<\/p>\n<p>&#8220;Peynirimiz il\u00e7emizde her zaman \u00fcretiliyordu ama \u00e7ok az ki\u015fi biliyordu. Co\u011frafi i\u015faretle hem peynirimizin hem de kentimizin isminin duyulacak olmas\u0131 bizim i\u00e7in olumlu. Bunda eme\u011fi ge\u00e7en herkese te\u015fekk\u00fcrlerimi sunuyorum. Peynirimizin kalitesini g\u00f6zenek yap\u0131s\u0131ndan anlayabiliyoruz, rengi sar\u0131dan beyaza d\u00f6nen bir peynirdir. Peynirimizi 120 g\u00fcn havuzlarda fermente ettikten sonra kesti\u011fimizde g\u00f6zeneklerinden ya\u011f akar. Bundan dolay\u0131 peynirimize &#8216;a\u011flayan peynir&#8217; de deniliyor.
